Happy Birthday America!

We had a fun day in the pool at GG and Pops' house yesterday to celebrate the 4th! It was a beautiful day, and this little guy had so much fun!

He took a whopping 30 minute nap in the car on the way over (compared to the 3 hour nap he normally has), so after a long day in the pool he was OUT like a light on the car ride home. So, needless to say, no fireworks or sparklers for us. We already bought the fun sparklers, so we will have to test those out another day.  Maybe part of the birthday fun?!

But even though there were no fireworks, all was not lost folks...because there was peach cobbler! Yum! It's low cal and sugar free, but never fear it actually tastes good (i.e. it is Jared approved!).
Here are most of the ingredients you will need...

Directions: Preheat the oven to 350 degrees. In a bowl, combine both bags of peaches (thawed), 1 1/2 teaspoons of cinnamon, 1 tablespoon of flour, 3/4 cup of Splenda, the zest and juice of half of a lemon.  After you mix all of that together, dump it out into a 9x13 casserole or cake pan.  Spread out 1 box of the sugar free cake mix so that it covers all of the peach mixture. It will look like this...


Next, pour one Diet Coke (or any diet drink for that matter), over the top of the cake mix so that it is completely covering all of the dry mix. 





Bake at 350 for 45 minutes, or until the top of the cake is dry and springy to the touch, and the fruit is bubbling at the edges.  Serve with sugar free Cool Whip, or I like it with the No Sugar Added Bluebell Homemade Vanilla Ice Cream.  YUM! 



One serving of the peach cobbler (1/12) is a total of 145 calories.  Make sure to count the ice cream as additional calories (1/2 cup of the vanilla ice cream is 90 calories.)
