Happy St. Patty's Day!


We love a reason to celebrate in this family, and Irish or not, we join right in! I didn't get a picture with Jared in it, but rest assured, he was definitely clad in green attire for the big day!

Unfortunately, there was no green beer this year, but we did have Cranberry-Orange Scones! I'm nothing if not festive!


Cranberry-Orange Scones (adapted from a recipe on www.tablespoon.com)
Ingredients:
3 cups Bisquick mix
1/3 cup sugar
2 1/2 Tblspn cold butter
1/2 cup dried cranberries
1/2 tsp orange extract
1/2 cup walnuts
1/2 cup milk
1 Tblspn melted butter

Directions:
Combine bisquick and sugar, and using a pastry knife or two forks, cut in the cold butter. The mixture should be combined and crumbly, like course meal.

Put cranberries in a separate bowl with 1 tablespoon of water, and cover with plastic wrap. Cook in the microwave for about a minute until the majority of the water is absorbed.

Add cranberries, walnuts, orange extract and milk to the bisquick mixture. Gently stir until the liquid is combined. Dump out onto a clean, dry surface--don't worry it should look like a big mess. LOOSELY knead/pat the mixture together into a circle about 1/2 an inch thick. The looser the mixture, the better the result so don't be overzealous. Cut into 8 even triangles, and transfer to a baking sheet. (I used parchment on the baking sheet, but you could just as easily spray it with Pam.)

Brush the triangles with the melted butter, and bake at 425 for 13-15 minutes, or until lightly browned.

At this point they are basically ready, BUT it was so much better when I added a little drizzle of icing!

Icing
1/2 cup orange juice
1/2 cup powdered sugar (more if you want it to be thick)

Drizzle on top of the scones and enjoy!

7 Months Old!



What fun 7 months has been for our little family! Greyson is changing so much these days! The BIG news is that we have the beginnings of a tooth!! There is a little nub of a tooth on the bottom working its way up. So far, it hasn't really seemed to bother him other than he is still chewing on everything he can get his hands on. Here is a picture of his new tooth, kinda scary huh? haha


Greyson's other big development is that he is thisclose to crawling! He gets up on all fours, and rocks back and forth, and starts to move his knees forward and then falls flat. He does alot of what we refer to as his "sky dive" move. He also has been going into some sort of tripod stance where it almost looks like he's going to stand up?! haha I have a feeling we may need to start babyproofing soon because he army crawls/scoots all over the place.



He has really started to actually play with his toys too. It's pretty cute! He loves to shake his rattle teething rings, and play with the stuffed animals that make noise. As far as I can tell, he hasn't developed a favorite yet, but according to a few sites I read he may decide on a favorite toy soon. Although, Minnie may develop into his new favorite toy! He is really interested in her these days, and has started to grab at her toys when she brings them over to him, which Minnie takes as a sign that it's playtime! She barks at him and gets so excited when he picks up her toys, but he hasn't quite figured out that she would like him to throw them. The only problem with this new found love of Minnie is that he likes to try to put her toys in his mouth! Sick!!



Speaking of toys,I couldn't resist putting this picture in! It's so funny, you would think we were torturing him by giving him a new toy!


Here's another one. He rarely gets this upset, so I had to grab the camera and get this for the blog! (I'm terrible, right?! haha)


Grey is wearing anything in the 6-12 month range. The 12 month clothes are a little roomie still, but the 9 month clothes pretty much fit.

Grey is eating a big lunch everyday consisting of a veggie, a fruit, rice cereal and a bottle. I have been dreading adding to our already hectic nightly schedule after work, but we are going to start having either a veggie or cereal at dinner time as well.

And finally, we were hit with the pink eye...Yuck!!! The poor baby looked terrible, but of course, he just laughed and smiled through the whole thing! We are SO lucky, I am knocking on wood right now! Praise the Lord for our laid back child! I pray it continues like this! I didn't get a picture of the full blown puffy face on day 2, but here he is on the way to the doctor's office.


But, no worries folks! He's all better now!
