Nesting Means Baking...



So if you know me at all, you won't be surprised to learn that nesting for me means baking! I've tried really hard not to get out of control, since I am apparently trying to break some sort of weight gain record, so I only let myself bake one thing per week! Haha

Last week it was chocolate rice crispie treats, the week before that it was bread, and before that it was vanilla ice cream and brownies! This final week before Greyson comes I made a Strawberry Cake with cream cheese frosting! Yum! I had to go out with a bang since the plan is to go on an immediate diet so as not to turn into "the fat Mom!"

Strawberry Jello Cake
Cake Ingredients
Strawberry Cake Mix
3 eggs
1 cup water
1/3 cup vegetable oil
Strawberry Jello
1 cup water

Icing
8 oz. cream cheese
1 lb. powdered sugar
1 tsp almond extract
2-3 tbl milk
1/2 cup sliced strawberries

Directions: Bake cake mix according to box directions in a 9 x 13 pan, and cool for 15 minutes. Mix 1 cup boiling water with small package of strawberry jello. With a fork, poke holes all over surface of cake, and pour jello mixture evenly over the top of cake. Refrigerate the cake for 3 hours.
To prepare the icing, allow the cream cheese to come to room temperature. Mix together cream cheese, powdered sugar, and almond extract until smooth. Add milk until icing reaches desired consistency. Fold in sliced strawberries, and spread on top of cake. (This cake will need to be refrigerated.)

Greyson's Nursery & the Countdown Begins!



So, it wouldn't be like us if we didn't finish the nursery at the very last minute possible! But, the nursery is finally finished! Well, almost finished... We are only lacking a set of paintings that DiOnetta is finishing for above the crib, and the mobile which I have been waiting for from Etsy for weeks!

We didn't procrastinate on purpose, but with the bedding fiasco (ordered in April, received last week!) it was a little difficult to do everything else. But, we are so happy with how everything turned out! Di painted his name, and Mom and Dad constructed the cute valance box and got everything hung on the walls for us! It was definitely a family affair!

Now we just need the little man to make it complete! Greyson will be here on Friday, July 30th when I go in for a scheduled C Section! We are so excited to meet him! I am a little nervous about the surgery aspect of all of this, but it will be worth it when he finally gets here!
